Homemade Apple Pie Filling

Ingredients
3 lbs Honeycrisp apples (approx. 7 cups sliced)
2 Tbs lemon juice
2 Tbs butter
1 cup granulated sugar (or 1/2 cup light brown sugar and 1/2 cup honey)
2 Tbs cornstarch
1 tsp ground cinnamon
1 tsp vanilla extract
1/2 tsp salt
1/4 cup apple juice or brandy
Directions
- Peel and core the apples. Slice or dice the apples according to size preference. Use slices or a large dice for pies. Use a smaller dice for hand pies, sauces or cobblers. Place the apples in a large bowl. Toss the apples with lemon juice.
- In a large saucepan over medium heat, melt the butter. Add the sugar, cornstarch, cinnamon, vanilla and salt. Stir to combine. Add the apples. Bring to a simmer while stirring constantly. Add the apple juice or brandy.
- Reduce heat to low. Continue cooking (stirring frequently) for about 20 to 30 minutes or until apples are tender and the mixture thickens. Let the filling cool for about 30 to 45 minutes before storing. The filling can be refrigerated for 3 to 4 days or frozen for up to 6 months.
